Today I made some delicious banana 🍌 blueberry muffins! These babies are so simple but delicious 🤤 and are made with no ❌ refined flours, sugars or oils and pack a whopping 8g of protein per muffin! 😋 I based this recipe off @sweetsimplevegan ’s banana bread recipe and adapted it into muffins and added a little protein 💪 but without any protein powder 🙀 I hope you try these out they’re truly delicious! 😘 What’s your favorite muffin flavor?
Dry Ingredients:
🔅 1 1/2 cups whole wheat pastry flour
🔅 1/2 cup soy flour
🔅 1 tbsp cinnamon
🔅 1 tsp baking powder
🔅 1 tsp baking soda
🔅 1/4 tsp salt

Wet Ingredients:
🔅 3 bananas (~350g)
🔅 100g dates (pitted)
🔅 1/2 cup soy milk
🔅 1 tbsp vanilla extract
🔅 1 tsp lemon juice
🔅 2 tbsp ground flax + 5 tbsp water/milk

Directions:
1. Preheat oven to 350 and whisk together dry ingredients.
2. Blend together wet ingredients.
3. Combine wet and dry in a bowl until uniform, but don’t over mix.
4. Transfer to a lined muffin tray and bake for 20-22 min.
