Mediterranean white bean salad 😋 see it come together in my stories! It’s super simple, but thanks to generous amounts of lemon and garlic, it packs a big flavour punch. Salt and fat (from olive oil) are key for flavour and mouthfeel, too.
Here’s the exact recipe:
Whisk together the juice of two lemons, 2 tbsp EVOO, 3 big cloves minced garlic, 1 to 2 tsp maple syrup, and a big pinch of salt. Add two 14 oz cans (or 3 cups) rinsed cannellini beans and combine. Set aside to marinate while you chop one orange or yellow pepper, a bunch of parsley, 3 leaves of kale, and a cup of halved grape tomatoes. Add all veg to the beans along with a cup of cooked quinoa, let sit for at least 15 minutes for the flavours to combine, taste and adjust, and eat!
