Here are two gluten free “bread” recipes that I have been using for times that I am craving something bready. The left side is similar to the Cheddar Bay Biscuits from Red Lobster and the right side is similar to a chocolate chip cookie if it was in bread form. I developed this recipe by accident when I was trying to make a healthier cookie. They ended up in bread form and I’m glad they didn’t turn out as expected because these are really good. Both recipes use the same skeleton and you can change the flavoring to make it work for what you need 🤠🤠

CHEDDAR BAY RECIPE:
Dry Ingredients:
1 cup oat flour
1/2 tsp onion powder
1 tbsp dried parsley
1 tsp salt
1 tsp garlic powder
1/2 tsp baking soda
1/2 tsp stevia

Wet ingredients:
1 small egg or 1/2 large egg
1/2 cup cheddar cheese
2/3 cup plain Greek yogurt non fat
Mix the dry stuff and wet stuff independently then combine. Use a cookie scoop to put on a sprayed sheet pan and bake at 375F for 15-17 minutes. .

CHOCOLATE CHIP RECIPE
Dry Ingredients:

1 cup oat flour (I put one cup of oats in the blender until they were dust)
1/2 tsp baking soda
1 tsp stevia
1/4 tsp salt

Wet Ingredients:
1 small or 1/2 large egg
2/3 cup plain Greek yogurt
1/2 tsp stevia
1 tsp vanilla
1/4 cup chocolate chips
Stir together the dry and wet separately then mix the dry stuff into the wet. Use a cookie scoop to make balls and bake at 375F for 15-17 minutes .
