Craving this simple lemon + mushroom gnocchi on this chilly day ✨ This is one of my favourite simple + quick meals when I get home and just need something easy and delicious 🙌🏼🌿.
To make 👇🏼:
Sauté 2-3 cloves of garlic with 1 tsp olive oil in pan on medium heat until fragrant. Add 1 cup of sliced mushrooms and 3 stems of kale, chopped. Pour 1/2 cup of vegetable stock into the pan, and let simmer for 3 minutes. Cook gnocchi per package instructions, and save 2 tbsp of cooking liquid from the gnocchi. Add to pan, along with drained gnocchi. Add 1/2 lemon, juiced, 5-10 sliced olives, and a pinch of salt + pepper + nutritional yeast. Sauté to combine and adjust flavors as preferred. Enjoy! 💛
