Where would I be without meal prep? ✨ I love prepping ingredients for Buddha bowls because all it really requires is roasting a pan of chickpeas, sweet potatoes + any other veggies you want and cooking a pot of brown rice or quinoa 🌿 You can change up the seasoning to fit your taste that week + change up your daily sauces depending on how you feel 🙌🏼 I always just try to make sure I have a source of plant-based protein (chickpeas), carbs (sweet potato), fat (olives + tahini) fiber (chickpeas +veggies) and FLAVOUR to keep me feeling full and happy 🥰.

Here I tossed a can of drained + rinsed chickpeas and 1 large chopped sweet potato with garlic powder, smoked paprika, oregano + salt. I roasted them on a pan at 450 F for 25 minutes. Once they were done I added celery, cucumber, red onion, kalamata olives + a tahini and lemon drizzle 💛
