Rice paper rolls are my favourite so I made these today because tomorrow I’m going fully raw for February. My noodles are coloured naturally with beetroot. Two flavours; pea, capsicum, carrot, avocado, cabbage and Thai basil and mint; and strawberry, raspberry, red onion, radish, cabbage, Thai basil and mint with Tamari as the dipping sauce. So many of you beautiful ladies have asked me about how I make these without breaking the paper and the truth is they don’t always work. Today I had to tweak my method slightly because a new batch of my regular brand were too sticky and breaking. I think it may have to do with the warmer weather here at the moment. I replaced the room temperature water I use to soften the papers with ice water and it worked. I also had to use a moistened tea towel today because the papers were sticking to the towel. Anyway, if your papers aren’t working try a different method because they all seem to be slightly different.
