👉🏼 Ingredients;
1 medium slice of sourdough bread
1/2 Avocado
1 tsp avocado oil
2 Eggs
Large handful of spinach
Lemon juice + salt to finish

👉🏼 Recipe;
1. In a medium – high sided bowl bring water to a rolling boil. Add 1 tsp salt + Apple cider vinegar also. Give a swirl so it forms a whirlpool.
2. Crack eggs into a low sided cup and add the eggs to the whirlpool water, (the wider the pan the easier to add more eggs at a time), add the other egg making sure to sync the drop so they do not catch one another. Continue to gently swirl and reduce heat to medium.
3. Whilst eggs cooking. Heat a wide saucepan add the avocado oil and add the spinach and sauté until wilted.
4. Toast the bread under grill.
5. Mash the avocado 🥑 with a fork.
6. Remove the eggs after 4 minutes with a slotted spoon to some kitchen paper.
7. Add the toast followed by the spinach, add the avocado to the toast then add the eggs on top. Sprinkle with salt and squeeze some lemon juice to enhance the absorption of vitamin c + non heme iron 💪🏼, especially important to all those plant based warriors 💪🏼
