I hope you’re weekend was a good one! Lunch today is two poached eggs over kale sautéed in garlic, red onion and a little olive oil, lemon parsley lentils, tomatoes and half an avocado. I used canned lentils, drained and rinsed and added a large handful of chopped parsley, juice of a lemon, a drizzle of olive oil and salt and pepper to taste. It was a seriously delicious protein packed meal.
