I don’t think I could ever get bored of oatmeal! I sometimes switch up my breakfasts and have, for example, toast or tofu scramble, but oatmeal is definitely a favourite of mine. I often have it for lunch or dinner too 😆 I’ve included the recipe below, which is incredibly simple but so yummy! Hope you’re all having a great start to the new week 💚

1 cup oatmeal
2 cups almond milk
1 banana, mashed
1 large apple, chopped
1 tbsp maple syrup
Cook the oatmeal with the almond milk and banana on a low-medium heat for around 5 minutes, or until thick. Meanwhile, add the apple to a non-stick frying pan together with the maple syrup and cook for 5-10 minutes. Serve on top of the oatmeal with more banana, coconut and peanut butter.
