My Azari and Persian infused tomato and eggs breakfast 🌹
2 tbsp unsalted butter
6 eggs
1 red onion, minced
5 Roma tomatoes, minced
4 tbsp persian tomato paste
2 tbsp garlic powder
1 tsp onion powder
1 tsp turmeric
1 tsp salt/pepper
1-1/2 cup of water
Bunch of chopped parsley
Directions: Heat a sauté pan with butter then add in your onions, until golden. Add in tomatoes, spices and tomato paste. Cook for a couple minutes then add in the water
Simmer for 5-10 minutes
Crack your eggs
Cook for another 5-10 minutes on med heat. Serve right away and sprinkle your parsley over eggs
