Rustic Apricot Galette ⠀😋

Crust: ⠀
1 1/2 cup of wholemeal flour⠀
1/2 cup of cold water⠀
1/4 cup of olive oil⠀

500gr of ripe apricots⠀
1. Preheat your oven to 200 degrees Celsius⠀
2. Mix the crust ingredients together then form a ball with your hands and roll with a rolling pin between 2 sheets of baking paper. ⠀
3. Form a round thin dough and lay the sliced apricots on top. Fold the edges to form a galette.⠀
4. Cook the Galette in the oven for 40 minutes or until the apricots are soft and the crust lightly golden. (I slightly overcooked mine! 🙈) ⠀
