Relying on this smokey black bean burrito bowl with vegan sriracha aioli to get me through a busy day ✨ I always forget about burrito bowls, but they’re seriously one of the easiest and most delicious meals to throw together 🙌🏼 They’re also perfect for packing and bringing to work or school, making them a busy persons life saver 🌿.

To make 👇🏼:
Cook rice or quinoa as per package instructions. Meanwhile, drain and rinse a can of black beans. Heat in a pan with 1 tsp smoked paprika, 1/2 1 tsp chili powder, 1 tsp garlic powder, 1 tsp onion powder + a pinch of salt and pepper (or all to taste). Sauté over medium heat until the beans have heated through and start to come apart a bit. Whisk together 1 tbsp vegan mayo, 1/2 tsp sriracha + the juice of half a lime. Chop desired veggies (I used shaved carrot, cucumber, arugula + red onion and should have used sweet potato!), assemble the bowl and drizzle over aioli. Finish off with a squeeze of lime and enjoy 💛
