Eating a variety of foods is very important, but repeating meals isn’t bad! I’ve had this same sandwich three out of four lunches since I first posted it because it’s delicious, fast, and I’m not going to let the ingredients go to waste! So here’s another seitan sandwich on whole wheat sprouted bread with mustard, spinach, avocado and this time a few cherry tomatoes with a side of carrots and hummus 👌🏻
