You’ll need:⠀
🍆1 eggplant, sliced in 1/2″ rounds⠀
🍅2 cups marinara (we like @raoshomemade)⠀
🍞12 GG crackers, pulverized⠀
🧀1/2 cup Parmesan, or more for layering⠀
🧂1 tsp garlic powder⠀
🧂1 tsp Italian seasoning⠀
🥚3 eggs⠀
🥬bunch of fresh basil⠀
🧀1 ball of fresh mozzarella, thinly sliced in rounds⠀

1. Preheat oven to 400 degrees and spray baking sheet generously with cooking spray. ⠀
2. In a shallow dish, stir together pulverized GGs, 2 tbsp Parmesan, garlic powder, Italian seasoning and a pinch of salt. In another shallow dish, beat eggs.⠀
3. Dip eggplant slices in egg, then in dry ingredient mixture. Place on prepared baking sheet.⠀
4. Bake in preheated oven for 10 minutes then carefully flip each slice and cook for an additional 5 to 10 minutes until nicely browned. Remove from oven and reduce oven temperature to 350 degrees.
5. In a baking dish, spread just enough marinara to cover the bottom of the dish. Place a layer of eggplant slices on the sauce. Cover each slice with a slice of mozzarella and sprinkle with additional Parmesan and thinly sliced basil. Repeat until all eggplant and mozzarella is used. Sprinkle fresh basil on top. ⠀
6. Bake, uncovered, in preheated oven for 30 minutes. Let cool and enjoy!🍆Some ideas to make it your own:⠀
