1 cup of chopped cherry tomatoes, 1 cup of rinsed organic or sprouted chickpeas, handful of chopped steamed asparagus (steaming it makes it easier to digest 💨 😉) 1/4 cup of sundried tomatoes, sumac and 1/2 cup of chopped green peppers.
For the vinaigrette (the usual!)
🍋🍋 my go-to “pour on everything”
3-4 tbsp of extra virgin olive oil
2 tbsp of fresh lemon juice
2 tbsp red wine vinegar
1-2 crushed garlic cloves
1/2 tsp dijon mustard
sea salt, oregano, fresh black pepper &
sumac to taste. 👌🏻about 1/2 tsp each of sumac and oregano. Whisk everything together, pour right before serving.
