This is a breakfast that I make once every couple of months for my weekly breakfasts. It’s a great way to get some vegetables in your breakfasts. The zucchini pairs well with the sweet potato and there is chopped spinach cooked with the sausage!!

As stated with all of these posts, the title of weight loss and weight gain is a snapshot of what it COULD look like for you. Some people will require more calories and some less. Adjust as necessary. In the weight loss meal there is half the sausage and a different mixture of the zucchini and sweet potatoes. There is much more zucchini than sweet potatoes than in the weight gain meal. Filling the meal with low calorie, high volume foods like zucchini is a great way to fill you up. The sausage is quite high in calories so you could also swap the kielbasa for a turkey or a chicken sausage. I know sausage is a processed meat and not always the healthiest but eating it once in a while is perfectly fine!!

In the weight gain post there is an extra half of an egg, more sausage, and more sweet potatoes than zucchini. Adding extra sweet potatoes is a great way to add in calories because they are highly palatable especially when paired with the fatty sausage. I prefer hard boiled eggs in my meal preps, they keep better in the fridge than scrambled or fried eggs. .
