scrambling it up for this savory Sunday spread 🤗💕
mashed avocado toast, creamy scrambled eggs and sliced tomatoes is what’s on this mornings menu ❤️ whenever I have an avocado that is a bit too ripe and there’s just absolutely no hope of making “pretty” slices, I always just mashed it up! 🥑 and I must say, as much as I love making beautiful slices and roses, having it mashed might be my favorite way of eating it!

I had such a lovely time at Michaels house last night – his brother made a delicious dinner and made the pasta and everything from scratch! (they are Italian, so I guess it’s in their blood, but still 😍)! I fully enjoyed all the cheeses + appetizers, the bolognese + especially the shortcake for dessert 🍝🍰 I feel so grateful that I am at a place in my journey where I can truly enjoy all the foods and not think twice about it or feel guilty later on. sure, I definitely ate past the point of fullness last night, but that is ok! I’ve learned that spending time with family and choosing happiness is way more important than eating “perfectly healthy”. when I am 80 years old, I’m not going to look back on how clean I ate and how much I exercised, I’m going to remember the memories and time I spent with people that I love. no guilt, second-thoughts, or “making up” for it today ❤️
I’m off to get some homework done before heading into work this afternoon, and then I’ve got a dinner with my coworkers this evening! 🥂
