Vinegar was first discovered accidentally thousands of years ago when wine 🍷 fermented for too long and it has since been used as a health tonic and food preservative. It also happens to be one of my favorite flavors, period!

Most vinegars contain negligible calories, and some contain interesting polyphenols, such as resveratrol which is found in balsamic vinegar and has been suggested to act like a calorie restriction mimetic.

All vinegars contain ascetic acid, which can help with blood sugar regulation and might even stimulate a key cellular energy sensor AMP-kinase, which can boost metabolic health. (Ref: https://www.ncbi.nlm.nih.gov/pubmed/16630552)

I love to add vinegar to my salads. Eating a large salad with a meal not only enhances satiety, but acetic acid can disrupt dissaccharidase enzymes which can lead to better postprandial (post-meal) blood sugar regulation.
