Forever my fav way to eat. Brown rice, organic edamame, peanut baked tofu, sautéed kale, avocado, sprouts, and sesame seeds all topped with homemade peanut sauce. The tofu is just gently pressed, cubed, and tossed in a little of the sauce then baked on silpat mats (or parchment paper) until crispy on the edges. And yes, these kind of meals will make you plant strong 🌱 💪🏻.
