I’m not much of a meal prepper, but I AM into the whole idea “cook once, eat twice.” I’d much rather throw together quick, 30 minute meals like, 2 times a week to mix it up a little. These Chickpea Meatballs are one of my favorites for lunch! The recipe makes about 15 meatballs plus it packs and reheats well, which is a must for me with leftovers. Paired over spaghetti squash and tomato sauce – recipe is in my book (and I walked through it on my stories last night)! 🍝
