For anyone who thinks that I have an obsession with tofu scramble. . . you’re right. If you’re in a pinch or just want something that has minimal cleanup and prep, tofu scramble is an excellent way to get in some plant based protein, veggies, carbs and fat. Tofu scramble is one of the easiest things to throw together and lets be honest, breakfast for dinner (or lunch) is one of the best things ever. This beautiful lunch is:
• 1/2 block extra firm tofu
• 1 red bell pepper
• 1/2 red onion • nutritional yeast, garlic powder, onion powder, turmeric, salt, black pepper to taste
All fried up in a nonstick pan with a little vegan butter and served with a hash brown and a sprouted bagel topped with mashed avocado 👌🏻 You could also add other veggies like mushrooms to this for an extra nutritional punch 🤛 This took only ten minutes to throw together and it was SUPER satisfying and comforting on a kinda gray day.
