On top of all of that this meal can be customized to fit your goals, whatever they are. You can swap the cauliflower for real rice and use ground beef for the meat if you want to gain some weight. If you want to lose weight you can use turkey instead of beef and cut back a bit on the oil used to cook the cauliflower and Brussels sprouts. The greens in the middle are not lettuce, they are Brussels sprouts so they heat up in the microwave well 😎
