To make 👇🏼:
Preheat oven to 450 F. Slice 5 large carrots into lengthwise spears + cut ~4 cups of brussels in half. In a bowl, toss carrots with 2 tsp coriander, 1 tsp garlic powder, 2 tbsp maple syrup + salt + pepper to taste. In a separate bowl, toss brussel sprouts with 1 tsp garlic powder, 1 tsp smoked paprika, 1/2 tsp of cumin, 2 tbsp of balsamic vinegar + salt + pepper to taste. Place brussel sprouts and carrots on baking tray + bake for 25 minutes, or until carrots are tender with a bit of crunch + brussels are crispy. Meanwhile, whisk together 1/4 cup tahini, 1 tbsp lemon juice, 1 tbsp maple syrup, 1/2 tsp garlic powder + enough water to thin. Once the veggies are done, toss in about 1 tablespoon of melted coconut oil. Drizzle tahini mixture over veggies to serve + enjoy! 💛
