BABY SPINACH or KALE ORANGE SALAD~🥗
If you’re hosting Christmas this year🎄your menu will be planned to perfection. But as you look over the dishes you’ll be serving, you might find that everything looks a little…..HEAVY.🤢
🍗From the turkey to multiple rich dishes made with heavy cream to a dessert table. And even though we love to go all out on Christmas and it’s surely NO time to COUNT CALORIES🙌🏼 you may want a lighter refreshing alternative to break up all the decadence. And Because you have a lot to prepare your side salad recipes shouldn’t be difficult.
•3 large hands full of baby spinach or 1 bunch curly kale, thick ribs removed, remaining thinly sliced (about 6 cups)
•2/3 cup sliced almonds, toasted
•1/3 cup sliced green onions
•100g goat cheese, crumbled
•1 blood orange, peeled & sliced into rounds then halved
•2 mandarin oranges, peeled & segmented
•3 Tbsp white balsamic vinegar
•3 Tbsp extra virgin olive oil
•2 Tbsp fresh orange juice
•1/2 tsp sea salt
•1 1/2 tsp dijon mustard
•1 tsp honey
*For the vinaigrette: In a mixing bowl whisk together all ingredients.
*For the salad: Add kale or the spinach, half of the almonds, half of the green onions and the mandarin oranges to a salad bowl. Pour over vinaigrette dressing then toss salad. Top with remaining almonds and green onions, add blood oranges and goat cheese and serve.
Chill until ready to serve.
