for all those asking this was my lunch today and it was SO simple and easy to make with veggies you have floating around the fridge and a great way to sneak heaps of veggies into your kiddos (or your own) meals!😏🥕🌱
• Cut up fresh tomatoes 🍅 if you have some on hand and pop them in a pan with fresh garlic (and a dash of olive oil if you like but it’s honestly not even needed in this recipe!) then add your favorite healthy pasta sauce I personally just use plain tomato passata with NO salt or preservatives then add in my own Italian herbs and basil for flavour! Then finely grate and chop zucchini and carrot 🥕 and spinach 🍃and stir them all together until warmed through and the spinach has wilted – add your pasta (i use buckwheat pasta from @nakedfoods ) and a generous sprinkle of nutritional yeast (tastes like cheese but is vegan and high in protein and b12!⚡️🙌🏼) top with some pepper and extra fresh basil on top and you are good to go! Full of quality clean protein, fiber and micronutrients 🤤
