Ingredients
3 medium eggs
1/2 tbsp EV Olive oil
1/2 Avocado
100 grams of kale / Brussel Sprouts / mushrooms

Method.
1. Slice the mushrooms + sprouts thinly.
2. Heat the pan on medium add the oil.
3. Add the mushrooms + sprouts cook for 4 mins
4. Add the kale , cook for 2 minutes.
5. Move to one side and crack the eggs.
6. Cook until your liking.
7. Add the avocado on top.
8. Season with salt to taste, I added some kelp for the iodine 🤗
