I don’t know where I’d be in life without meal prep 🙌🏼 I’ve never been one to make meals to last the entire week, but I absolutely love having ingredients that can be quickly thrown together to make a delicious meal depending on my mood ✨.
Today I used garlic + oregano roasted chickpeas, smoked paprika sweet potatoes (both roasted on a pan together at 459 deg F), red pepper, massaged kale, red onion, kalamata olives + a tahini lemon drizzle to make this Buddha bowl for lunch, which came together in 15 minutes 🌿 Do you meal prep?! 💛
