Coming down with a cold means throwing it back to this warming soup I made a few weeks ago ✨ This soup is packed with nutrients but still brings that comfort factor that I’m craving right now- I’ll be living off this for the next few days 😍.

To make 👇🏼:
Dice 1 onion, 4 cloves of garlic + a 1 inch thumb of ginger. Add to a large soup pot and sauté until the onion is translucent. Meanwhile, chop 1 large sweet potato, 3 stalks of celery, 1 bell pepper, + 3 carrots. Add to the pot along with 1 can of diced tomatoes, 1 drained and rinsed can of chickpeas, 5 cups of vegetable stock, 1 cup of plant based milk of choice (optional), 1 tbsp smoked paprika, 2 tsp garlic powder, 1 tsp onion powder, 1 tsp dried parsley + salt and pepper to taste. Cook on medium heat for 20-30 minutes, until sweet potatoes can be easily pierced with a fork. Add 3 handfuls of kale or other leafy greens and enjoy! 💛
