Quick, easy & satisfying breakfast: this should take you no longer than 15 minutes in the morning and keep you satisfied for hours! 😌⏰ ⠀

A balanced breakfast contains a portion of protein [in this case, from eggs], healthy fats [from avo] plus fibre-containing carbohydrates [from mushrooms, zucchini and spinach] ☺️🍳🌿🍄🥑⠀

Breakfast, no matter what time you eat it, represents a great way to get in a serve or two of veggies in your first meal of the day. Through eating fruits and vegetables, consuming a variety of plants in your diet is super important, as it helps with maintaining a healthy balance of bacteria in your gut! 🙌🏼⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
👉🏼 What you need:⠀
• Two eggs⠀
• Handful of spinach⠀
• 1/3 whole zucchini⠀
• 1 cup mushrooms⠀
• 1/2 avocado⠀
• Salt, pepper, chilli flakes⠀
• EVOO/ oil of choice for cooking⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
👩‍🍳 Method:⠀
1️⃣ In a saucepan, use 1 tbsp EVOO to coat the sliced zucchini and cook on medium heat for 5 minutes with a lid to cover (turn over as they start to brown).⠀
2️⃣ Add in the mushrooms and cook for a further 5 minutes (no lid, turning when brown).⠀
3️⃣ At the same time, in a small pot, heat up 1/4 cup water. Add the spinach, just before the water reaches boiling temperature. Leave for about 1 minute or until wilted then transfer to a plate with absorbent paper.⠀
4️⃣ Add the two eggs to the saucepan and cook until desired firmness (on low heat).⠀
5️⃣ Slice up avocado and place all of the hot ingredients onto your plate when they are cooked to your liking. Add chilli flakes to eggs if desired.⠀
6️⃣ Enjoy!⠀
