I love lettuce wraps for lunch because they fill me up but aren’t too heavy on calories. Having a big lunch isn’t always best for me because it makes me want to take a nap, especially when I’m sitting at my desk at work. Another plus of the lettuce wrap is that you get an easy way to include some raw vegetables in your diet. As I’m writing this I realize this may not be the best time to promote this recipe because romaine lettuce is currently being attacked by E. coli in the states. Use Butter lettuce instead!! .

Chicken Burrito Bowls are my favorite recipe to meal prep. I am never disappointed by them and I will never get tired of eating them. I’ve cooked this recipe so many times that I can knock it out in under an hour which is all the more reason to make them often. I think they rival chipotle burrito bowls in flavor and they destroy chipotle in terms of cost per bowl 😎
